What About Rosie?

I would have liked to hear more about the Sam-Rosie connection in the book. It's clear there was something between them prior to Sam going away. Evidence for this is when in Mordor, at a point of despair, Sam mentions Rosie, and how he wished he could see her one more time. Also, when they get back to the Shire, Sam goes to see her first. I haven't seen any mention about her showing up in the movies, but I think it would be great if she had a part. My two cents.
