The Trolls in Question...

Keep in mind that in the book, in the battle fought just outside the Black Gate in ROTK, there were trolls in the army that Sauron uses against them, Pippin even kills one. Evidently as is explained somewhere in Tolkien's text, Sauron was able to breed a race of trolls that did not turn to stone. Sorta the same thing where Saruman bred orc that could tolerate the sun. Maybe the trolls seen in the movie are of the same kind that are later seen in the final battle.
