Andrew, the answer to your question is that PJ and co opted to ommit the 7 year siege of Barad-dur and the battle of Dagor-lad from the prologue, instead shifting the whole of the action to the final climactic battle on the slopes of Mt Doom. It may be assumed that the batle of Dagor-lad still took place in the movie trilogy, however, because we still see the bodies of the fallen in the Dead Marshes just outside the Morrannon.
