This is not necessarily true. Luthien returns to Middle Earth as a mortal, and yet Luthien's and Beren's son, Dior, chooses to be an Elf.

Obviously, Eldarion chooses to be a man since he becomes king of Gondor after Aragorn's death. However, it is never really stated what choices the daughters of Aragorn and Arwen made, if indeed they were allowed to make a choice.
