Ialaith, I thinkd that what is more likely than the meeting with Butterbur is that Froda and co. will go straight form the wedding to the Grey Havens. We have a shot of Sam with Elanor, but that could be a clip form after the departure of Frodo to show the audinece how Sam goes on with his life and marries Rosie after Frodo leaves.

If PJ is feeling ambitious and artistic, he might even put the shot of Rosie, Sam, and Elenor right at the start of ROTK, and have Sam retell the entire last part in flashback, leaving the audience members with no foreknowledge wondering what has happened to Frodo.

Of course, an even bolder move would be to have the aged Sam, just after the death of Mistress Rose, retelling the story in the Red Book. The movie could then end with Sam heading down to the havens, maybe even with Legolas and a now greying Gimli, and departing over the sea to be reunited with his master.
