RotK Deleted Scenes?

After seeing ROTK, i can safley say it was one of the best movies i have ever seen. The changes put in did more to add then to detract to the movie. I would have loved to seen the scourging of the shire, Saruman's staff being broken, Theoden's body bein taken off the Pelenor Field and Frodo and Sam's journey put into song in Gondor but sometimes one must be content for what they have.

There were a few scenes that i thought would be in the movie that i did not see and if anyone could shed some light on them i would apreciate it.

In both the trailers for ROTK and the trilogy as a whole, we see Merry offering his sword to Theoden at Edoras but it wasn't in the movie. We also see Eomer crying over someone's body on the Pelenor Fields (I'm assuming Theoden but maybe Eowyn)in the ROTK trailer but that was left out as well. But a huge thing that was left out (besides Saruman) was the mouth of Sauron. I recall reading that someone was casted to play this role but it wasn't in the movie. Was this scene filmed and left out or just taken out before being filmed?
