Aragorn was actually about 90 during the time of the War of the Rings, but still young considering he lived to be about 210 years old.

Sauron had a part in the making of the rings for men and dwarves - that is why he was able to control or manipulate the owners. Celebrimbor made the elven rings without Sauron's help. Thus Sauron could not control the elven rings. However, since Sauron was the master of ringlore (and the most powerful being in Middle Earth at the time), he was able to link the essence of all the rings into the One Ring.
